Making dinner.

When I’m craving rice and something creamy (24/7), but don’t want to deal with my rice cooker burning half the pot, I turn to this.

Shrimp and Rice Casserole from Jenna at eat, live, run.

The ingredients are simple and the recipe is easily adaptable if you are catering to different party sizes. I’ve only ever made this recipe for a party of.. one, so I divide the ingredients in half (technically this will still serve 3-4 people, so it’s still way too much food for me (it’s not)).

Adjustments: I halved the recipe, but used a full red bell pepper and small yellow onion . In addition, I decided to forgo the “cream of chicken” and went with a full can of “cream of celery.” I suspect it will taste just fine. Expect an update within the hour:

Update: I always forget how spicy Rotel is. Be prepared or adjust accordingly. Otherwise, it’s delicious. If you halve the recipe, you can reduce the baking time by 15 minutes. I also used a 9×9 baking pan instead.
